I do indeed!

I use this recipe a fair bit because one of my housemates is wheat intolerant. It’s a recipe I adapted from the Babycakes cookbook.

Basic muffin mix:

2 cups plain gluten-free flour *
2 tsp GF baking powder
2 tsp baking soda
1 tsp Xanthan gum or guar gum
1 tsp salt
1/2 cup vegetable oil
2/3 cup sugar
2/3 cup soy or rice milk, or fruit juice
Plus spices/essences/nuts/fruit/chocolate/whatever

*I usually make my own GF flour mix - for 3 cups of flour, combine 2 cups brown rice flour with 2/3 cup tapioca flour and 1/3 cup potato starch

Preheat the oven to 170C and prepare your muffin tray. In a bowl whisk the flour(s), baking powder, soda, gum, salt and any dry spices. Add the oil, sugar, milk/juice, and any essences and stir until smooth. Fold in any other ingredients at this stage, such as nuts, fruit or chocolate. Pour 1/3 cup of the batter in each muffin cup and bake for 20-22 minutes. Let the muffins sit for 15 minutes in the tray before cooling on a wire rack.

These are usually pretty light if a bit crumbly, but I’ve never had them turn out too dense. Let me know how you go, and if you come up with a particularly delicious flavour combination let me know about it!
