Vegan minted cashew ‘yogurt’ raita.
I soaked a handful of raw cashews for an hour or so, drained them and placed them in a food processor with a little water, lemon juice and salt. I pureed this before adding a few fresh mint leaves, blending until the mint was chopped fine. Before serving I stirred through some finely chopped red onion, cucumber, coriander and yellow pepper. With enough lemon juice this actually takes on a real yogurty taste.
