Vegan Thai red curry with enoki and shimeji mushrooms, on a bed of dumpstered wrap bread and topped with sprouted red lentils.
Roasted tomatoes with pesto mushrooms on quinoa salad (sliced green olives, roasted garlic, caramelised onions, toasted almonds, parsley, mint, coriander, with balsamic/lemon juice/olive oil dressing).
Toasted sourdough with home-made hummus, pesto mushrooms, parsley and toasted seeds.

Rosemary roasted mushrooms, baked herbed polenta triangles and sauteed kale in garlic ‘butter’.
I’m staying in this Friday night. I have Mad Men, this, date squares and endless cups of tea - why would I want to be anywhere else?
Spaghetti with lentil bolognese, topped with shredded smoked tofu.
This sauce is so fucking good. Whole red lentils and mushrooms replace mince beef, with carrots, garlic, onion, and plenty of oregano, bay leaves, salt and olive oil. Simmered for a really long time to get nice and rich.
Saturday breakfast: fried asparagus, mushrooms, Adelaide tomatoes (incredible!), toast and avocado. Not pictured: strawberry pancakes.
Roasted rosemary mushrooms with fried tomato wedges, baby spinach and polenta
My incredible lunch on the weekend, the first time in a while I’ve actually bought fresh groceries and not just scrounged what was in the pantry. I wanted to recreate the mushrooms I had in Jordan earlier in the year, so I roasted them in plenty of olive oil, fresh rosemary, salt and pepper, and threw in a few whole cloves of garlic still in their skins. The tomatoes I friend in olive oil with a little salt, pepper and dried oregano. Sprinkled on top are tamari roasted pepitas and sesame seeds and a few chia seeds.
