Breakfast in the van.

Oat porridge with home-made soy yogurt, cinnamon-roasted Pink Lady apples and maple syrup.
I had an informal interview for a baking job I’d be perfect for, so I needed a good breakfast to prepare me. I want it so much I’m making myself very nervous!

Quinoa porridge with cinnamon vanilla poached apples, dates and almonds.
This was my indulgent breakfast the other stormy morning. I started by soaking 1/4 cup of white quinoa in water for 15 minutes (this removes the bitter-tasting sapponins). I then cooked the quinoa in 3/4 cups of water. Once all the water was gone, I added 3/4 cups of rice milk and a tsp of candied mixed peel and let this simmer gently.
In a seperate pan I melted a heaped tablespoon of brown sugar in 1/2 a cup of water. To this I added a pinch of ground cinnamon and a 1/4 tsp of vanilla paste. Into this syrup I added as many apple slices as would fit in the pan and let this simmer until the apple softened and the syrup thickened.
To assemble, I drizzled the syrup over the apple and quinoa and topped with chopped dates and toasted sliced almonds.
